Grilling is a fantastic way to cook food. The intense heat creates a delicious flavor that can’t be matched by other methods. And it’s not just for meat-eaters! Vegetarians can enjoy grilling too, with recipes like skewers of bell peppers and onions, or a portobello mushroom cap.

No matter what you’re grilling, make sure to preheat the grill first. This will help ensure that your food cooks evenly and doesn’t stick to the grill. Then, simply choose your ingredients and follow the recipe. Most recipes only require a few minutes of grilling time, so it’s easy to get dinner on the table.

Charcoal Grilled Chicken Recipe

Ingredients

  • 1 whole chicken, cut into 8 pieces
  • 1/2 cup olive oil
  • 1/2 cup bbq sauce
  • 1 tablespoon smoked paprika
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. Preheat your charcoal grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, bbq sauce, smoked paprika, chili powder, garlic powder, onion powder, salt and black pepper.
  3. Place the chicken pieces in a large resealable bag or a baking dish and pour the marinade over top. Marinate for at least 1 hour, up to 12 hours.
  4. When the grill is hot, place the chicken pieces on skewers (if using wooden skewers, soak them in water for 30 minutes before using) or directly on the grates. Grill for 8-10 minutes per side, until cooked through.

Grilled Corn on the Cob Recipe

Ingredients

  • 6 ears of corn, husks and silks removed
  • 1/3 cup olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder

Directions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, garlic powder and chili powder.
  3. Grill the corn for 10-12 minutes, turning every few minutes, until cooked through. Brush with the chili oil mixture before serving.

Charcoal Grilled Vegetables Recipe

Ingredients

  • 1 large zucchini, cut into 1/2 inch slices
  • 1 large red onion, cut into 1/2 inch slices
  • 1 large bell pepper, cut into 1/2 inch slices
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt

Directions

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, toss together the zucchini, red onion, bell pepper, olive oil, garlic powder, chili powder and salt.
  3. Grill for 10-12 minutes, turning every few minutes, until cooked through.
  4. Serve immediately.

Charcoal Grilled Fish Recipe

  • 4 (6-ounce) catfish fillets
  • 1/4 cup olive oil
  • 1/4 cup bbq sauce
  • 1 tablespoon smoked paprika
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. Preheat grill to medium-high heat.
  2. In a large bowl, whisk together oil, bbq sauce, smoked paprika, chili powder, garlic powder, onion powder, salt and pepper.
  3. Place catfish fillets in the bowl and coat with the marinade.
  4. Grill for 6-8 minutes per side, or until fish is cooked through.
  5. Serve immediately.

Beef and Vegetable Grill on a Charcoal Grill Recipe

Ingredients

  • 1 pound beef, skirt or flank steak
  • 1 bell pepper, any color
  • 1 onion, any color
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • 1/4 cup chopped fresh cilantro

Directions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the beef, bell pepper, onion, garlic powder, smoked paprika, chili powder, salt, and black pepper. Drizzle with olive oil and lime juice, and mix until the beef is coated.
